If you're Muslim, you get Hindustan, and if you're Hindu, you get Bharat. Just pick the starting nation that fits your difficulty needs and seems most interesting to you. Both are pretty much useless imho. You dont get cores, no powerful national ideas or new accepted cultures. All you get are permanent claims.Take note that Hindustan does have a unique mission tree that can give some nice temporary goodies while the Deccani and Bahmani trees are the same. Hindustan is the end tag. Deccan is just a midpoint you can so if you haven't already upgraded to an empire.
